Hello, I Love You


The first time I ever heard the Doors, I was ten and driving out of New Hampshire.

My good friend Tash and I had been tubing at Lake Winnipesaukee for a week. As her parents pulled the car away from the lake, "Hello, I Love You," came on. We looked at each other and started cracking up.

At ten years old, it sounded like a pretty silly song.

ANYWAY!!!

I found myself saying "Hello, I love you" this past Monday morning. I was just walking down the non-dairy milk aisle of Whole Foods, minding my own. Out of nowhere, it jumped out at me.



365 ALMOND MILK!!!!


Let's review the ingredients, shall we?

Almonds
Water
Sea salt
Xanthan Gum
Tricalcium Phosphate
Potassium Citrate
Sunflower Lecithin
Vitamin A
Vitamin D2
Vitamin E

Notice anything missing?

There's NO CARRAGEENAN!!!

There's NO SOY LECITHIN!!!!

YAY!!!

And I forgot to mention - it tastes awesome.


I bought three boxes. Here they are in the back of my car.


When it comes to non-dairy milk, I prefer to make my own. This way, there's none of the "ates" and "ins" and "ols." You know, the stuff that we see on every processed food but don't really know what it is? I mean, it's convenient. But it's not ideal.


How to Make Non-Dairy Milk

Take 1/4 cup of nuts or seeds.

Process them in a processor.

When they are well processed, add 1 - 1 & 1/4 cup of water.

Let the processor whirl until everything is smooth and white.

Strain through a nut milk bag or...

a t-shirt!!!


Pour strained milk into a bottle.

Admire its glistening crisp clean glorious whiteness.


Place bottle in the fridge.

Smile.

Feel like it's the 1930s or something...

whenever milk was last delivered in bottles!!!!


Any kind of nut or seed makes good milk. Different milks go good with different things too. My personal fave is almond, because it's cheap and goes good with anything. Hazelnut and pecan are good to save for tea and coffee. Hemp works well for smoothies. When feeling really decadent, make some macadamia milk. It's very rich and luscious.

Now, not to discredit 365...


... But this is America, land of the overworked and lazy. We are busy little bastards. Not every day leaves a spare half hour to squeeze nut juice out of a t-shirt.

Yes, I know what I just said.

Wink. Wink. Nudge. Nudge.


The BEST thing about the new 365 milk is that it's closer to the REAL thing.


And to my carrageenan, naturally flavored, soy-filled Almond Breeze, I am saying...

Ahh, this is amazing! Is it cheaper than Almond Breeze? I, of course, would rather make it, but I can manage that about once a month. Having a VitaMix would be a lot easier, I'm sure.

BONUS, though: Almond Breeze is now soy-free (at least the refrigerated unsweetened vanilla is) -- still has carrageenan, but I have no qualms with that.

Just when I'm starting to get into the whole Almond Milk movement, you go and pull the rug out from under me...

The box I have does say Soy and Lactose free... so, if I get me some cancer from drinking nut milk, I guess I was doomed to get cancer, period.

I've realized that I'll likely never be as super-healthy as you are Anney, but I did read your articles and try to heed your advice, when possible.

I drink almond milk on the regular. I haven't seen pecan milk but it sounds good.

I have to admit: I'm too lazy to make almond milk. I barely get around to making dinner...

Yay for them using sunflower lecithin and not soy! We use sunflower lecithin all the time love it ;) I love hemp milk the best followed by pumpkin seed milk and than nut milks :)

Very cool! I've been looking for an easy recipe for almond milk! Thanks a bunch. And to answer your questions: I'm allergic to cow milk; I rotate goat milk, soy milk, almond milk, rice milk, and coconut milk, but my favorite is goat; and I've recently fallen in love with Pamela's gluten free Bread and Baking mix. It tastes and acts so much like the real thing! Makes great chicken or turkey fingers.

Heather - Thanks for telling me about the Breeze! I had no idea!!!

Andy - Everything gives you cancer. Duh. ;) And I'm FAR from super healthy. I eat way too much caffeine, sugar and fat, and definitely not enough vegetables. I also drink! Every weekend! This blog is meant to capture more of a fascination with healthy foods, rather than touting "look how healthy I am."

Linds - Homemade milk is so much tastier than boxed milk. I can't even describe it. It's richer, creamier, more flavorful. Definitely give it a try!

Drea - Making your own milk and dinner is definitely hard after a long day's work! I agree!

Marlow - I know it! The unsweetened chocolate almond breeze is so rich and velvety!

Twins - I still have yet to try pumpkin seed milk! One of these days! :)

Katherine - Does that bread mix need a dough kneading machine? I'd love to try it! Thanks for the tip!

I love Almond milk - but Almond Breeze is the best pre-packaged I can get around here. The nearest whole foods is a couple of hours away - next time I'm there I'll have to look for this! I'd like to make it myself but I'm afraid my cheap blender would die if I tried to blend nuts! Buying a vitamix or other quality blender would almost take my whole paycheck!

Barb - Good question. I think you can make nut milk from roasted and raw nuts. I use Trader Joe's nuts, and their true rawness has always been in question. Don't quote me on this though!

Ashlie - I hear you... my queese has about had it from only two years of use. Damn vitas are too expensive.

Wheee, good for you! Here in endangered-Tiger Land(India I mean :P) milk is about Rs 22-30 a liter - 05.-0.75USD - while the other milks are Rs 80 or so. It kinda sucks.

Fortunately, veggies and fruit are cheap, so dairy-free isn't all that hard for me!

Suki - Non-dairy milk is expensive here too. Many of my non-dairy free friends tell me they want to try it, but won't because of the price. That's another reason why making it at home is so much better! :)

Heather - make almond milk ice cream!!! I bet it will be so much better than Almond Dreams.

I just saw your comment on HEAB's blog today. I've been reading for a while, and not commenting (shame on me...) but anyway, I have the same troubles with nut butters. I have heard that sprouted nut butters are better....how do you make your own?

"Busy little bastards"... I like it! I can't believe you make your own nut milk! How impressively wonderful! Non-dairy milk is one of those things I think of as pure magic... no clue how they make it and no intention of trying, just glad it exists. But now, I'm intrigued. I want to make my own... someday! For the moment, I'll just admire your creation ;-)

Oh, and I drink Silk. I also like Living Harvest Tempt...

i made my own almond milk once but have been too lazy to try it again. i think my recipe was more complicated than yours? anyway, thanks for the super simple recipe! i like almond milk but its so much more expensive than dairy and soy, i never buy it.

I usually only use a 'milk' when I am eating cereal and then I use Rice Milk. Seems dairy, almond & soy milk make me bloaty. Though I seem okay with delicious cheesey goodness, or I just forgot about the bloat while lost in a cheese fueled haze.
