
Back in the day when I ate shitty, McDonald's was never something I agged for. It was pizza, oreos, tastykakes. Then, around 2003, they invented the McGriddle.

With it's syrup-encrusted fluffy pancakes and rich cheesy middles, the McGriddle won my heart. I love the combination of sweet and salty in this sandwich. BUT - I knew, as everybody does, that the McGriddle was bad news bears for my body.
So I ate two, maybe three, back in 2004. Then I gave them up.
Until now!!!How to make a gluten free McGriddle is pretty damn easy. Follow my pancake recipe. While the pancakes are on the skillet, drizzle syrup on the uncooked gooey part. Then flip!
Check out the swirly syrupy top!The cheese is raw and made by my local Mennonite pals. The eggs are local free range. The funny thing?

I felt pretty sick after I ate it!!!!

I'm betting it was the combination of eggs and carbs, which I rarely do. I was shaky hungry prior - so it wasn't like I nommed this on an already full stomach. Either way - my mouth said YES. It was worth it, though I doubt I'll make it again!
